About this opportunity

 

An exciting opportunity has arisen for an experienced Chef De Cuisine to effectively manage and lead our talented team of chefs in Outlets, which includes Kalinda, Trattoria Amici, Tees' Clubhouse, Videre, Panorama Lounge & Arika Pool Bar.

Reporting to the executive chefs, you will be responsible for ensuring the day-to-day operations of the outlets run smoothly. Key responsibilities for the role include:

 

  • Being innovative, passionate and enthusiastic for hospitality and service to deliver exceptional food experiences for our guests
  • Lead, delegate and support a team of chefs, with a ‘hands on’ approach to deliver a high standard of product, service and a positive work environment
  • Train, provide feedback and manage staff performance & leave
  • Manage stock, reporting, forecasting and ensure budgets are acheived
  • Build positive working relationships with internal & external stakeholders
  • Identify opportunities to improve services, productivity & efficiencies
  • Support the business commitment to sustainability, WHS & hygiene standards & company policies & procedures

 

Our team work a 7 day rotating roster, including evenings, weekends & public holidays. Full availability is required.

What you’ll need to be successful

 

  • Experience in a CDC or similar position in a 4/5 star hotel/resort or equivalent
  • Certificate III in Commercial Cookery qualification, essential
  • Food handling & OHS Certificates, essential
  • First Aid Certificate, desirable
  • Extensive knowledge of food preparation, cooking techniques and service
  • Attention to detail, passion for cuisine with a strong focus on food quality and presentation, emerging trends and the ability to update menus
  • Strong leadership skills to engage, manage, train, and inspire
  • Work well in a team environment with strong communication and interpersonal skills
  • Knowledge of budgeting and accounting procedures including planning, forecasting and cost controlling
  • Excellent personal presentation
