A Day in the Life: 

As our Sous Chef – Banquets, you'll play a key leadership role within our Banquets Kitchen, supporting the Chef de Cuisine in delivering exceptional dining experiences across conferences, events, weddings and special functions. You'll help lead the brigade day-to-day, ensuring seamless service, high culinary standards and an outstanding experience for every guest.

Your team-first approach, strong communication skills and hands-on leadership style will set the tone within the kitchen. You'll mentor and develop chefs across the brigade, fostering a culture of collaboration, accountability and continuous improvement. With a passion for quality and attention to detail, you'll help drive consistency, creativity and operational excellence throughout our banqueting operation.

 

What You'll Need:

  • Experience in a fast-paced 4-5* resort or restaurant environment in a similar position

  • Exposure to fine dining is essential

  • Sound culinary knowledge

  • A creative and innovative mindset

  • A desire to further develop your skills

  • Flexibility to work across a 7-day roster, including weekends and peak holiday periods

  • Full working rights in Australia
