We are seeking a Head Chef who can balance the sophistication of a 5-star club, with the proven operational ability of a large-scale culinary hub.

 

The Role

As Head Chef, you are the heartbeat of the City Club’s kitchen operations. This is a high-impact leadership role where you will be responsible for the strategic and daily management of our kitchen brigade. You will ensure that every plate—whether a quick lunch or a degustation dinner—reflects the quality and prestige our members expect and deserve.

 

Your Key Focus Areas

  • Visionary Leadership: Lead a large, multi-functional kitchen brigade with a "hands-on" approach. You will mentor the next generation of chefs, fostering a culture of innovation and high performance.
  • Operational Mastery: Oversee everything from menu engineering and stock rotation to rigorous hygiene standards and capital asset planning.
  • Financial Stewardship: Take full accountability for budgets, labour costs, and COGS, ensuring the kitchen meets financial targets while maintaining 5-star quality.
  • Member-Centric Service: Collaborate with other Leisure departments to create seamless, "Member First" experiences that differentiate RACV from the competition.

 

What You’ll Bring to the Table

  • The Experience: A background in 4–5 star hotels or high-volume, premium club environments.
  • Technical Excellence: Mastery of all kitchen sections—from butchery and sauces to fine dining and large-scale banqueting.
  • Business Acumen: Strong skills in forecasting, strategic planning, and cost control.
  • Composure: The ability to direct a large team and make critical decisions while remaining calm under the pressure of a busy CBD service.
