About the Role

We are seeking a talented and driven Chef de Partie to join our Conferences & Events kitchen team. This role plays a key part in delivering high-quality culinary experiences for conferences, functions and large-scale events, while supporting the effective day-to-day operation of the kitchen and mentoring junior team members.

 

You will work collaboratively with the wider brigade to ensure exceptional food quality, consistency and service for members, guests and visitors, while adhering to RACV standards, policies and procedures.


Key Responsibilities

Leadership

  • Train, induct and support the development of apprentices, cooks and junior chefs

  • Provide regular, constructive feedback and escalate issues when required

  • Foster a positive team culture and contribute to team meetings and continuous improvement initiatives

  • Build strong working relationships across kitchen teams and RACV properties

  • Support knowledge sharing, innovation and industry best practice

Product & Service Delivery

  • Deliver consistent, high-quality food aligned with RACV standards

  • Perform cooking across multiple disciplines including hot kitchen, cold larder, pastry and butchery

  • Manage section requisitions and stock rotation to minimise wastage

  • Maintain high presentation, portion and quality standards

  • Ensure chemicals and equipment are handled and stored correctly

Kitchen Operations

  • Oversee the day-to-day operations of your assigned section

  • Delegate tasks effectively within the kitchen brigade

  • Ensure mise en place is completed to a high standard

  • Maintain a clean, safe and hygienic kitchen environment

  • Work across all kitchen areas as required to support event delivery

  • Apply sustainable work practices to reduce waste and support environmental initiatives


About You

You are a passionate hospitality professional who thrives in a fast-paced events environment and enjoys developing others.

 

Essential Skills & Experience:

  • Strong knowledge of food preparation, cooking techniques and kitchen operations

  • Solid experience across sauces, cold larder, vegetables and butchery

  • Excellent understanding of mise en place and section management

  • Strong stock rotation and waste minimisation practices

  • Knowledge of food safety, cleaning and hygiene standards

  • Proven ability to train and mentor junior team members using on-the-job techniques

  • Experience within a 4–5 star hotel, resort or high-volume conference/events operation
