About the Opportunity
We’re currently seeking passionate chefs at all skill levels to join our dynamic culinary team. Across RACV City Club, our chefs have the opportunity to work across a variety of kitchens and dining experiences, from our busy bistro and café operations to high-volume conference and events catering, as well as premium dining outlets. Using high‑quality, fresh produce, our team consistently delivers exceptional cuisine and memorable dining experiences for our guests.
Our team work a 7 day rotating roster including evenings, weekends & public holidays. Our various kitchens cater for breakfast, lunch and dinner service, in-room dining and large C&E groups.

Your key responsibilities for the role include:

Perform kitchen operation duties
-
Perform knife skills, mis en place, cooking techniques & duties
-
Produce a consistent high quality product & standard
-
Maintain equipment, utensils and a clean & hygienic kitchen
-
Rotate stock, ensuring minimal wastage
-
Work well in a team environment and follow directions from senior chefs
-
Follow WHS, policies and procedures
What you’ll need to be successful
-
Flexibility and availability to work a 7-day rotating roster - weekdays, evenings, weekends & public holidays. Our team work between 5am - midnight

Completed a vocationally accredited Certificate 3 in Commercial Cookery qualification, for Commis role & higher, essential

Previous cooking experience in a 4-5 star hotel/resort commercial kitchen, essential

Knife, food preparation & cookery skills ie. conference & events, larder, grill, buffet and short order

Understanding of kitchen sections, service styles, mis en place procedures, food items, cookery techniques, sauces, cold larder, vegetables & butchery

Thrive in a large, busy & fast paced work environment, with efficiency, organisation, time management and attention to detail

Effective communication skills, can follow direction and work well in a team environment

Committed and a passion for cooking with a strong focus on food quality and presentation

Excellent grooming & personal presentation
