About the Opportunity

In this role as a Pastry Chef, you will be responsible for assisting in the effective operation of the kitchen. This will be achieved by working as a team with other kitchen staff to provide the appropriate quality and level of pastry products and service to members, guests & visitors by adhering to RACV policies and procedures.

As a Commis Pastry Chef, your key responsibilities for the role include:

  • Checking the cleanliness of equipment and operation of premises before production runs to ensure compliance with occupational health and safety regulations

  • Checking the quality of raw materials and weighing ingredients

  • Kneading, maturing, cutting, moulding, mixing and shaping dough and pastry goods

  • Preparing pastry fillings

  • Monitoring oven temperatures and product appearance to determine baking times

  • Coordinating the forming, loading, baking, unloading, de-panning and cooling of batches of bread, rolls and pastry products

  • Glazing buns and pastries, and decorating cakes with cream and icing

  • Operating machines which roll and mould dough and cut biscuits

  • Emptying, cleaning and greasing baking trays, tins and other cooking equipment

  • Maintain knowledge of and deliver products and services to members, guests and visitors that are compliant with standard RACV operating procedures.
     

What you’ll need to be successful

  • Basic knowledge of food items and base cooking techniques.

  • Good knowledge of pastry.

  • Knowledge of the kitchen sections and associated service styles.

  • Knowledge of cleaning and hygiene procedures.

  • Understanding of stock rotation.

  • Thrive in a large, busy & fast paced work environment, with efficiency, organisation, time management and attention to detail

  • Strong communication skills, can follow direction and work well in a team environment

  • Committed and a passion for cooking with a strong focus on food quality and presentation
