About the Opportunity
In this role as a Pastry Cook, you will be responsible for assisting in the effective operation of the kitchen. This will be achieved by working as a team with other kitchen staff to provide the appropriate quality and level of pastry products and service to members, guests & visitors by adhering to RACV policies and procedures.

- As a Pastry Cook, your key responsibilities for the role include:
- Checking the cleanliness of equipment and operation of premises before production runs to ensure compliance with occupational health and safety regulations
- Checking the quality of raw materials and weighing ingredients
- Kneading, maturing, cutting, moulding, mixing and shaping dough and pastry goods
- Preparing pastry fillings
- Monitoring oven temperatures and product appearance to determine baking times
- Coordinating the forming, loading, baking, unloading, de-panning and cooling of batches of bread, rolls and pastry products
- Glazing buns and pastries, and decorating cakes with cream and icing
- Operating machines which roll and mould dough and cut biscuits
- Emptying, cleaning and greasing baking trays, tins and other cooking equipment
- Maintain knowledge of and deliver products and services to members, guests and visitors that are compliant with standard RACV operating procedures.
What you’ll need to be successful
- Basic knowledge of food items and base cooking techniques.
- Good knowledge of pastry.
- Knowledge of the kitchen sections and associated service styles.
- Knowledge of cleaning and hygiene procedures.
- Understanding of stock rotation.
- Thrive in a large, busy & fast paced work environment, with efficiency, organisation, time management and attention to detail
- Strong communication skills, can follow direction and work well in a team environment
- Committed and a passion for cooking with a strong focus on food quality and presentation
