What You’ll Do
- Oversee all kitchen operations, ensuring consistent delivery of high-quality food across banquets and casual dining.
- Champion the use of local produce, celebrating the flavours and ingredients of the Central Mid West region.
- Develop menus that showcase seasonal and regional specialties, building strong relationships with local suppliers and producers.
- Manage budgets and implement cost-control strategies.
- Inspire and mentor a passionate team, fostering a culture of excellence and collaboration.
- Ensure compliance with hygiene and safety standards.
- Drive creativity through seasonal menus and promotional opportunities.

What We’re Looking For
- Extensive culinary knowledge across all kitchen sections, including sauces, cold larder, butchery, and regional cuisine.
- Proven leadership experience in a 4–5 star hotel or similar environment.
- Strong financial acumen with experience in budgeting and cost control.
- Excellent communication and time management skills.
- Ability to thrive under pressure and deliver consistent quality.
- A passion for hospitality and a desire to create memorable guest experiences, with a commitment to local produce and regional identity.
