Join the culinary team at RACV Cape Schanck Resort, working across Samphire Restaurant and our Conference & Events kitchen. This is a permanent full-time opportunity suited to a qualified chef who loves delivering consistent, high-quality food and wants variety across restaurant service and events.
About the opportunity
As a Commis Chef, you’ll support the effective day-to-day operation of the kitchen by working collaboratively with the wider brigade to deliver the right quality and level of service to members, guests and visitors, while following RACV policies and procedures.
The role you’ll play
Reporting to the senior kitchen leadership team, you’ll contribute to service delivery through strong prep, section support and kitchen operations, including:
- Delivering products and service that align with RACV operating procedures and quality expectations.
- Cooking duties across sections (including tasks such as baking, pastry cooking, cold larder, vegetables and butchery as required).
- Completing mise en place to support smooth restaurant and events service.
- Maintaining stock rotation and minimising wastage.
- Keeping the kitchen in a clean and hygienic state, including safe chemical handling and correct storage practices.
- Working across all areas of the kitchen operation as instructed (including manual handling tasks such as dishwashing support, moving catering equipment, waste disposal and deep cleaning when required).
- Caring for kitchen equipment and utensils; contributing to safety and environmental best practice (waste minimisation and resource conservation).
- Communicating clearly between sections and with other operational areas of the property to support service delivery.
- Supporting team morale and contributing to a “can-do” service culture; assisting with onboarding/training where required and supporting apprentices assigned to sections.
What you’ll need to be successful
- Qualified Chef — completed an apprenticeship or Certificate III in Commercial Cookery (or equivalent) with experience.
- Food Handlers Certificate
- Previous experience in a commercial kitchen
- Basic knowledge of food items and base cooking techniques; understanding of kitchen sections and service styles.
- Knowledge of sauces, cold larder, vegetables and butchery.
- Strong hygiene and cleaning practices; understanding of stock rotation.
- Solid communication skills and time management, able to deliver quality under pressure and to deadlines.
